Every year I get asked to copy this on the rant somewhere, here it is for this year.....
I make double batches and my sister freezes some for my nieces....they put their order in every Thanksgiving. Enjoy -----------------------------------------------------------------------------
INGREDIENTS 3 1/4 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon ground nutmeg 2 cups solid pack pumpkin puree 1 cup vegetable oil 1/2 cup chopped walnuts (optional) or you can use raisins or I just leave it plain sometimes 1 1/2 teaspoons salt 1 teaspoon ground cinnamon 3 cups white sugar 2/3 cup water 4 eggs
DIRECTIONS Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C). Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans. Bake for approximately 1 hour.

Thanks LM, sounds great, I will definitely give it a try! I have some pureed sweet potatoes left over from another recipe, I wonder if I can substitute it for the pumpkin, mmm, sounds like a plan!

I was going to try the sweet potato too, just remember the consistency of the potato may be different so adjust your liquids accordingly... You might want to substitute applesauce for oil.

Just curious...have you tried this recipe with Splenda, LM?
I gots da sugar, so I gots to watch dem carbs.

I have never tried it with Splenda, I guess you'd have to see what the conversion is for the amounts. If you try it let me know how it comes out.
